I have been cooking perfect rice for over 20 years and I must give credit where it is due. Sevim Ozbilgin, who was my mother-in-law at the time, taught me how to make perfect rice. It is always fluffy and delicious every time. I am giving you the recipe below for plain rice but you can take this simple technique and make countless versions. I will give you some ideas for variations in upcoming posts.

Ingredients
- 2 Tablespoons Cooking Oil
- 2 Tablespoons Butter
- 1½ Cups Jasmine Rice
- 3 Cups Boiling Water
- 1 Teaspoon Salt
Instructions
- Heat the cooking oil and butter in a pot.
- Add the rice and salt and coat thoroughly with the oil and butter mixture.
- Toast 2-3 minutes then pour in the 3 cups boiling water.
- Cover, lower heat and cook for 16 minutes.
- Remove from heat and place a clean kitchen towel over between the pot and the lid.
- Let rest 5 minutes.
