Spinach, onions and Feta go so well together and this recipe is no exception.  Spinach Feta Puff Pastry Pizza would be good to serve as an appetizer at a cocktail party or for brunch.  It is really light and tasty.  You could serve it with soup or a salad for a light lunch.  You make your own puff pastry but be prepared to take about a day to do so.  I made homemade puff pastry years ago but it was too time consuming.  You have to make the dough, roll it out, place cold butter in the center, fold like an envelope and then roll again.  You repeat this procedure several times. Placing it in the freezer for 30 minutes each time.  I personally do not have the time to do that anymore but it really does taste better if you have the time to make it yourself.  Either way you decide, it will be delicious, just remember to bake it with love!

Spinach Feta Puff Pastry Pizza
Ingredients
  • ½ pound Puff Pastry Dough, thawed (in USA ½ of Pepperidge Farm package)
  • 10 ounces Frozen Spinach, thawed and excess moisture squeezed out
  • 4 ounces Feta Cheese
  • 1 Cup Shredded Italian Six Cheese Blend (or any cheese you like)
  • ½ Small Onion
  • Dash Salt
Instructions
  1. Pre-heat oven to 350 degrees.
  2. Slice ½ of small onion into thin half moons and set aside.
  3. Squeeze the liquid from the spinach and place in bowl.
  4. Add the feta and mix through.
  5. Take the thawed dough and roll into a rectangle 9x13.
  6. Line quarter size (9X13) baking tray with parchment paper.
  7. Lay dough on parchment paper and make small pricks with a fork.
  8. Sprinkle ⅓ Cup shredded cheese on the pastry and bake for 5 minutes.
  9. Remove from oven and spread the onions evenly onto the pastry.
  10. Evenly distribute the spinach and feta mixture.
  11. Top with remaining ⅔ Cups shredded cheese.
  12. Bake for an additional 15 minutes.
  13. Remove from oven and cut into rectangles.
