Sweet & Sour Beef & Peppers with Rice Noodles

Ingredients
- ½ pound Beef Stew Meat
- 1 small Onion
- 1 Cup Sweet Bell Pepper, red, yellow and orange
- 2 Cups Beef Stock
- 2 Tablespoons Olive Oil
- ⅓ Cup Soy Sauce
- ⅓ Cup Apple Cider Vinegar
- ⅓ Cup Brown Sugar
- 1 Teaspoon Corn Starch
- Dash Sesame Oil
- 3-4 Cloves Garlic, crushed
- 1 Pound Rice Noodles
Instructions
- Slice onions and peppers and saute in olive oil.
- Cut the beef stew meat into smaller pieces and add to onions and peppers. Saute the meat for 4-5 minutes and add the garlic and saute a few more minutes.
- Add the beef stock and bring to a boil. Reduce heat to low, cover and cook for 45 minutes or until meat is tender.
- Mix the salt, apple cider vinegar, soy sauce, and brown sugar with the corn starch.
- Stir into the meat and onions and peppers.
- Continue cooking while the noodles boil.
- Fill a large pot with salted water and bring to a boil.
- Add the noodles and boil for six minutes.
- Drain the noodles and then mix with the meat, onions and peppers.
- Serve immediately.
