One of my favorite fruits is a nice ripe banana. The strange thing is that when I buy more than a couple at a time, they never get eaten. If I buy 2-3 bananas, I will go to grab one and someone will have beaten me to it. However when I buy a whole bunch, 5-6 bananas, they NEVER get touched. Well, lucky for you guys, that is what happened to bring about this post. I had a bunch of bananas that were sitting so lonely on the counter. I decided to rescue them and make my yummy Banana Nut Bread. The two loaves this made were gone in two days. It is excellent with a nice creamy cup of coffee or a cup of hot tea. Try it yourself, I think you will agree it is a moist delicious bread.
- 2 Cups All Purpose Flour, sifted
- 1 Teaspoon Salt
- 2 Teaspoons Baking Soda
- 1 Cup Vegetable Oil
- 2 Cups Sugar
- 4 Eggs
- 4-5 Ripe Bananas, Mashed
- 1 Cup Walnuts, Chopped
- Cooking Directions
- Pre-heat the oven to 350 degrees.
- Spray your pan with baking spray or grease and flour them. You can use two loaf pans or whatever appropriate pan you have available. I used one loaf pan and one small disposable bunt pan.
- In a medium sized bowl, sift the flour, salt and baking soda together and set aside.
- Place the sugar in a large mixing bowl and mix in the cooking oil until well blended.
- Beat the eggs in one by one until well mixed.
- Mash the bananas and add to the liquid mixture, then add in the flour mixture and walnuts.
- Mix well and distribute evenly between your pans.
- Bake at 350 for 1 hour or until done and golden brown.
- Test with a toothpick to see if the cakes are cooked.
