Chicken with Mixed Vegetables or Tavuklu Türlü
My sweet sister, Kim had brought me these fresh green beans, a small eggplant and some juicy tomatoes from her garden and I knew I had to make something really delicious out of them. I had some boneless, skinless chicken breast in the fridge so I decided to make this Chicken with Mixed Vegetables or Tavuklu Türlü. It was so good, I only had a small amount left for lunch the next day. You could use other vegetables like okra or zucchini as well. If you do not have access to fresh vegetables, you can certainly use frozen or canned, but I prefer fresh if possible. Try this recipe. . . I think you will really like it.

Chicken with Mixed Vegetables or Tavuklu Türlü

Ingredients
- 1 Pound Chicken Breast, bones and skin removed
- 2 Medium Potatoes
- 1 Onion
- 1 Pound Green Beans, trimmed and strings removed
- 1 Small Eggplant
- 1 Pound Tomatoes, peeled
- 2 Cloves Garlic, smashed into a paste
- 2 Tablespoons Olive Oil
- 1 Tablespoon Salt
- ¼ Teaspoon Black Pepper
- 28-32 ounces Chicken Stock or Water
- Note: If tomatoes and green beans are not in season, you can use canned but if possible, fresh is better.
Instructions
- Wash your potatoes, green beans, eggplant and tomatoes.
- Trim your green beans and cut your potatoes into uniform sized cubes. Peel the eggplant by peeling about a ½ inch wide strip down the length of the eggplant and then skip about ½ inch and repeat making a stripped effect on the eggplant. Chop the eggplant into uniform sized cubes. Peel the tomatoes and chop roughly. Set all these aside until ready to add to the pot.
- Pour the Olive Oil into a deep stock pot.
- Add the onions and saute about 5 minutes.
- Add the crushed garlic and saute 3-4 minutes more.
- Cut the Chicken Breast and add to the stock pot. Stir frequently.
- Add the potatoes, green beans and eggplant. Then saute for 4-5 minutes more.
- Place the crushed tomatoes in the pot and give a good stir.
- Pour in the Chicken Stock or Water.
- Add the salt and black pepper.
- Lower heat to low, cover and simmer about 45 minutes to 1 hour until everything is tender and cooked.
- Serve with Vermicelli Rice or Sehriyeli Pilav. Afiyet olsun!
