Who loves Meatloaf? Not the school lunchroom kind but the yummy, meaty, full of flavor kind! I know I do and I had been thinking about how good it would be for dinner for several days. Well, last night I decided to go ahead and make one. Boy was it goooooodddd. I served it with mashed potatoes and a green salad. Nothing is better than some good old comfort food but for the record, it was even better today as a Meatloaf Sandwich. There are so many ways to make a meatloaf and I personally like my recipe. You could always adjust this recipe to your own taste buds. You could omit the bell pepper and add bread crumbs instead of toasted bread. You could add Italian Seasoning or Cajun Seasoning. You could omit the brown sugar or just omit the ketchup topping altogether. You can do what you want because it is your meatloaf. Let me know how you like yours. Hope you enjoy! Afiyet olsun!
- 1 Medium Onion, chopped about 1 Cup
- 1 Cup Chopped Red, Yellow, Orange or Green Bell Pepper or a mixture of them
- 1½ Pounds Ground Beef
- 1 Egg
- 1 Slice of Bread, toasted
- 1½ Teaspoons Salt
- ½ Teaspoon Black Pepper
- 1 Teaspoon Garlic Powder
- 1 6 oz can Tomato Paste
- 1 Tablespoon Brown Sugar
- 4 Tablespoons Spicy Ketchup (use normal ketchup if desired)
- Preheat the oven to 400 degrees.
- Chop the vegetables and toast the bread.
- Combine the onions, peppers, bread, egg, salt, pepper, garlic powder, ground beef and ⅔ of the can of tomato paste in a large mixing bowl.
- Spread the meat mixture into a cast iron skillet or a loaf pan and place in the oven.
- Mix the remaining tomato paste, ketchup and brown sugar.
- After the meatloaf has cooked for 30 minutes, remove from oven and spread the ketchup mixture over the top of the meatloaf.
- Cook for 20 to 30 more minutes.
- Serve with mashed potatoes and a salad. Afiyet olsun!
