Peanut Butter Pecan Oatmeal Cookies
Fall is one of my favorite times to bake. And since the Apple Pie I made the other day was a flop, I was in the mood for something sweet with a hint of cinnamon. After baking two trays of these Peanut Butter Pecan Oatmeal Cookies, I was going to eat a couple to make sure they were tasty. Obviously, they were delicious because a couple turned into six. They literally melt in your mouth. I could not stop myself. Take my word for it, bake up a batch and watch the leaves fall.

Melt in your mouth Peanut Butter Pecan Oatmeal Cookies

Ingredients
- ½ Cup Peanut Butter
- 2 Sticks Butter
- 1 Egg
- ¾ Cup Brown Sugar, packed
- ½ Cups Sugar
- 1 Teaspoon Vanilla
- 1½ Cups All-purpose Flour
- 1 Teaspoon Baking Soda
- ¾ Teaspoon Cinnamon
- ½ Teaspoon salt
- 3 Cups Oats, uncooked
- 1 Cup Pecans, toasted and chopped
Instructions
- Pre-heat oven to 375°F.
- Next, cream butter, peanut butter and sugar until creamy.
- Add in the egg and vanilla and mix well.
- Add the flour, baking soda, cinnamon, and salt.
- Mix well.
- Pour in the oats and pecans.
- Mix well.
- Scoop dough with a cookie scoop or tablespoon and place onto parchment paper lined cookie sheets.
- Bake 8 to 10 minutes.
- Place cookies on wire rack to cool completely.
- Store in an airtight container.
