First of all, Happy Fourth of July!  I am sitting here stuffed to the max, but our lunch was so good, I wanted to share my recipe for Smoked and Slow Cooked Boston Butt Pulled Pork Sandwiches with you all right away.  I will be posting my Peach Habanero Barbecue Sauce, my White Barbecue Sauce, Grilled Corn and Black Eyed Pea Salad and Potato Salad Recipe with you this week.

I had been wanting to cook a Boston Butt on the grill for some time and I knew today was the perfect opportunity to tweak my delicious grill spice mix and use as a rub for the Butt.  Did you ever wonder where the name Boston Butt originated?  If you are thinking it comes from the lower end of the little piggy right, then you are wrong.  Boston Butt comes from the shoulder of the pig.  In colonial days, the lower quality cuts of pork were packed into and stored and shipped in barrels also known as butts. The style of cutting the meat was the Boston style, hence the name Boston Butt.  I think the technique I used turned out beautifully and I hope you will try it out soon! Let me know how yours turns out!  Enjoy and Afiyet olsun!

Recipe type: Main
Cuisine: American
Ingredients
  • 1 4-5 pound Boston Butt
  • 2 Tablespoon Salt
  • ¼ Cup Brown Sugar
  • 1 Tablespoon Cumin
  • 1 Tablespoon Cayenne Pepper
  • 1 Tablespoon Onion Powder
  • 1 Tablespoon Paprika
  • Wood Chips for smoking the meat
  • Charcoal
  • Sesame seed buns
  • Barbecue Sauce, optional
  • White Sauce, optional
Instructions
  1. Mix the salt, brown sugar and all the spices in a bowl or jar.
  2. Trim any excess fat from the Boston Butt and pat dry with a paper towel.
  3. Sprinkle the spice mix all over and massage into the meat. You can do this 24 hours in advance if you like to give more flavor. Refrigerate until 30 minutes prior to grilling.
  4. Soak 1 Cup of Wood Chips in water.
  5. Prepare your charcoal in your grill. I personally NEVER use charcoal lighter.
  6. Make a foil packet and place the soaked wood chips in the foil packet. Seal the sides. Cut small slits in the top of the foil packet.
  7. Once the coals are fiery hot, place the Boston Butt on the grill. Lay the wood chip packet on the grill next to the meat.
  8. Close the vents on your grill, leaving a little open space. Cook for two hours, turning every thirty minutes.
  9. Remove the Butt from the grill and place in a slow cooker. Cook on low for 8-12 hours.
  10. Pull the meat from the bone and place on a bun with sauce if desired. Afiyet olsun!
