Who doesn’t love chocolate? I know I love it! When I was pregnant with my daughter, way back in 1992, I practically lived off chocolate. Her father is a pilot and every time he flew to a different country, he would always bring me chocolate back.
Unfortunately, I no longer have my own chocolate stash flown in to me from around the world. Now days when I want chocolate, it is a Reese’s Cup or I have to make myself something yummy. Today was one of those days when something chocolate sounded so good. I had some dried cherries and thought they would go great with the chocolate. It was a match made in heaven. Try out my recipe. - ½ Cup Butter, melted
- 1 Cup Sugar
- 2 Eggs
- ½ Cup Hershey's Cocoa Powder
- 1½ Cups All Purpose Flour
- pinch of salt
- 1 Teaspoon Baking Soda
- 1 Teaspoon Baking Powder
- ½ Cup Dried Cherries
- ½ Cup Chopped Pecans, optional
- ½ Cup Boiling Water
- Additional Tablespoon or so of Butter to grease pan or individual baking dishes
- Your favorite Ice Cream for serving
- Pre-heat oven to 350 degrees F.
- Melt butter and let cool.
- Add in the sugar and the eggs and beat with a wire whisk (or electric if you prefer) until well blended.
- Stir in the Cocoa, flour, salt, baking soda and baking powder.
- Stir in the Cherries and then quickly whisk in the boiling water.
- Pour into a 9X13 baking pan or individual baking dishes that have been greased with butter.
- If using pecans, sprinkle on top of the batter.
- Bake for 15-20 minutes or until no longer gooey inside.
- Top with ice cream while still warm.
