I didn’t mention yesterday “why” it had been so long since I had posted anything. The main reason is because I do not like to complain. And while I don’t like to complain, I feel like I should explain why I haven’t been blogging as regularly as I would like to. The fact is, I have been in excruciating hip pain for quite some time now. One thing about me is I hate going to doctor’s. Well, after some urging by a few people, I decided to try a Chiropractor. I am in more pain now than when I started. Of course, when this happened, I “Googled It” and found out this is normal in some cases to feel worse before feeling better. I will go two to three more times and if it is not better, then I will just grin and bear it. In the meantime, I hope to be blogging on a more regular basis soon. I did manage to whip up this yummy Peach Trifle and about 70 Köfte for our Watts-Chumley Family Reunion that was held today. I had bought some peaches from a peddler who came into the Chiropractor’s office on my visit this week. They looked beautiful but were a little firm for me. I had every intention of enjoying them on their own but realized they were not ripe enough. While trying to decide what to take to the reunion, I remembered the firm peaches and also the fact that I had bought a case of ladyfinger’s at Restaurant Depot a couple of month’s ago and had placed some of them in the freezer. This is what I came up with and it was really delicious if I say so myself. Hope you will try this recipe and I am sure it would be even better with ripe juicy peaches. Afiyet Olsun!
- ½ Cup Brown Sugar
- ¼ Cup Granulated Sugar
- 1 Tablespoon Butter
- 5 Peaches
- 1 Orange, juiced
- 1 Package Cream Cheese, softened
- 1 14 ounce can Condensed Milk
- 1 Package Ladyfingers (about 24 pieces)
- ½ Cup Vanilla Wafer's, crushed
- Optional Cool Whip or Homemade Whipped Cream
- In a large bowl, mix the cream cheese and condensed milk until fluffy. Place in fridge until ready to assemble.
- Place the butter, brown sugar and granulated sugar in a 3 quart sauce pan and turn the heat to medium.
- When the butter is melted, add in the washed and chopped peaches.
- Cook about 5 minutes then add the juice of the orange.
- Lower heat and cook 15 minutes.
- Cool the peaches completely.
- When the peaches have cooled, place the lady fingers around the sides of your trifle bowl and on the bottom.
- Remove the cream cheese mixture from the fridge and spoon ⅓ of the mixture over the bottom of the bowl.
- Top with ⅓ of the cooled peaches.
- Continue layering with the remaining cream cheese and peaches. You will have three layers.
- Top with the crushed Vanilla Wafer's.
- Cover with plastic wrap and return to fridge until ready to serve.
- Scoop into serving dishes and top with Whipped Cream if desired. Afiyet Olsun!
