larified butter is butter that has had all the water and milk solids removed. It is great for cooking rice, risotto, and pasta dishes. Many Indian dishes call for Ghee which is a form of clarified butter. Once clarified, the butter can be stored outside the refrigerator but personally, I would store it in the fridge. It can be kept up to one year if refrigerated.

Ingredients
- 1 pound Unsalted Butter
Instructions
- Melt the butter over low heat until a white foam appears on the surface.
- Skim and discard the foam.
- Slowly pour the clarified butter in a bowl, leaving behind and discarding the milk solids that have collected at the bottom of the pan.
- This will keep a few weeks if stored tightly covered in the refrigerator.
