Oven Roast Fries
While there are over a hundred varieties of potatoes in America, there are thousands of ways they can be prepared. Potatoes are broken down into the following categories:  yellow, white, russet, red, blue or purple, fingerling and petite.  Potatoes can be sliced, chopped, diced, cubed or served whole.  They can be boiled, fried, creamed, pureed, or baked. They can be used in soups and stews and casseroles.  When we were small and my mother would be cooking dinner, we would even sneak a few raw ones!  My mother also made an awesome “candy” for us which was basically a boiled potato mashed with powdered sugar, that she would roll out and spread with peanut butter, then roll like a jelly roll and cut into slices.  It was amazing!  We never knew that was poor folk’s food, we just knew it was delicious. I will make the candy one day and post the actual recipe.  In the meantime, here is a great recipe for Oven Roasted Fries that are really good because they are good and crispy on the outside and creamy on the inside.  Go ahead and try them, you won’t regret it.

Ingredients
  • 5-6 Medium size potatoes
  • 3 Tablespoons Olive oil
  • ½ - 1 Tablespoon Salt (I like salt. . . use less if you don't)
  • 1 Tablespoon Dried Parsley
  • ½ teaspoon Paprika
  • ½ teaspoon Marjoram
Instructions
  1. Cooking Directions
  2. Pre-heat oven to 450 degrees and line a baking sheet with aluminum foil (optional for easy cleanup). Mix the salt, parsley, paprika and marjoram in a small bowl. Drizzle the pan with half of the olive oil and sprinkle on half the spice mixture.
  3. Scrub potatoes well and dry off with a clean kitchen towel or paper towel.
  4. Slice the potatoes into small strips. Arrange on the baking sheet.
  5. Sprinkle with remaining spice mixture and remaining olive oil.
  6. Use clean hands to mix together.
  7. Make sure the potatoes are in one even layer and not stacked on top of each other or they will not crisp up.
  8. Bake at 450 for 10 minutes then reduce temperature to 350 for 15 minutes or until golden and crispy.
