A while back, I bought a rotisserie attachment for my charcoal grill from Wally World for only six bucks! I have been chomping at the bits to try it out. Of course the first thing that came to mind is to make doner. Doner is a Turkish dish that is meat on a spit that is cooked vertically. I will have to make a few adjustments because the rotisserie is horizontal, but I am sure it will turn out just fine. Anyway to try it out, I decided to start with chicken. I have my chicken marinating in onion juice and spices and it will be ready to put on the grill tomorrow. I decided to go ahead and make my quick and easy puffy pita bread because you can’t have doner without a good pita bread. Well, you could, but it wouldn’t be Turkish 🙂 Check back for my upcoming doner recipe! You will love it!
- 3 Cups Bread Flour (+ ¼ cup for rolling dough)
- 1½ Teaspoon Salt
- 1 Tablespoon Honey
- 1⅛ Cup Warm Water
- 3 Tablespoons Olive Oil
- 2¼ Teaspoons Yeast
- Warm 1⅛ Cup Water to 110 degrees.
- Sprinkle the yeast over the water and then stir in the honey.
- Leave to proof for 5 - 10 minutes.
- Place the bread flour and salt in a large mixing bowl.
- Stir in the salt. Make a well in the center of the flour.
- Once the yeast has proofed, pour the yeast into the well.
- Mix until thoroughly combined and then knead for 5 minutes.
- Cover the bowl with a damp cloth and place in a warm place to rise for 20 minutes to 1 hour.
- Sprinkle a little flour over the risen dough and turn it out onto a work space.
- Roll the dough into a log and cut into 8 equal pieces.
- Shape into balls and cover with a clean towel to rest for about 30 minutes.
- Heat the oven to 500 degrees and place a small ovenproof dish filled with water in the bottom rack..
- Once your oven is hot, sprinkle your work surface with flour and roll each ball of dough out into a round shape. Place 3-4 pieces of dough on a baking rack and place into the oven.
- Bake for 5 minutes until puffed and golden.
- Continue cooking in this manner until all the pitas are cooked.
- Eat immediately or you can cool and store in a paper bag for a couple of days.
