After our appointment with the chiropractor last Thursday, my daughter, Stella and I stopped at the Attalla Farmer’s Market to pick up some fresh fruits and veggies. Although there were only four vendors there this week, we got some really fresh and pretty produce. We bought eggplant (the small variety I like), squash, tomatoes, cucumbers, peppers, onions and a watermelon. Since we could not eat all the peaches before they were about to be over ripe, I decided to make us a yummy cobbler. I have never mixed fruit before when I have made cobbler in the past but the combination of the strawberries and peaches, really turned out beautifully. - 3-4 Cups Peaches, cut into thick slices
- 1 Pint Strawberries, cut in half
- 2 Tablespoons butter
- 2 Tablespoons sugar
- For the Crumble Topping:
- 1 Cup Butter, softened
- 1 Cup Sugar
- 1 Cup Flour
- ¼ Cup Oats
- Pre-heat oven to 375 degrees.
- Place butter in a cast iron or other oven safe skillet or pan.
- Melt the butter on the over medium heat.
- Stir in the 2 tablespoons sugar.
- Add the peaches and strawberries and saute while you prepare the crumb topping.
- In a mixing bowl, combine the butter, sugar, flour and oats until it sticks together but is still crumbly.
- Cover the top of the fruit with the crumb mixture and place into the pre-heated oven.
- Bake for 20-25 minutes until the crumb topping is golden and baked through.
