First of all, I would like to apologize for not posting in over a month and a half. I had so much going on in the past two months that I have not had much time for cooking. In fact, I think I have only cooked once in the past three weeks. I started a new job and I am having to drive 45 minutes each way to go for my training. I also moved. I am still unpacking! Anyway enough on that subject. I did find time to make a sweet treat for my sweet sister’s birthday. She told me this year she did not want a cake only some of my Homemade Milk Chocolate and Dark Cherry Ice Cream that I made back in the summer. If you have been reading my blog for a while, you know that I love to make my family feel special and loved. I couldn’t just make one ice cream, I had to make two, so I adapted my Milk Chocolate recipe and made this yummy Homemade Vanilla Bean Ice Cream for my Sissy’s Birthday! She may have a new favorite. Try my recipe and make someone you love smile!
- 1 Cup Milk
- 1 Cup Sugar
- 1 Whole Vanilla Bean
- 4 egg yolks
- 2 Cups heavy cream
- Place the milk, sugar and vanilla bean in a medium sized sauce pan and heat until the sugar is dissolved.
- Remove the vanilla bean. Split the vanilla bean and scrape the beans into the milk and sugar mixture.
- Whisk the egg yolks in a mixing bowl until well combined.
- Next, temper the yolks by taking ½ cup of the hot milk mixture and slowly and quickly (very important) whisking into the egg yolks. Whisk vigorously. Whisk in another ½ cup of the hot milk mixture in the same manner.
- Now slowly and vigorously whisk the egg mixture back into the saucepan of hot milk.
- Continue whisking for about 5-7 minutes until mixture thickens.
- Pour into a freezer safe container (I use a glass mason jar).
- Cool down before placing in the freezer to chill for 30 minutes.
- Remove from freezer and mix with the heavy cream. Stir well.
- Pour the mixture into your ice cream freezer canister.
- Freeze according to your ice cream freezer directions.
- Note: You can cool the milk mixture quickly by placing your freezer safe container into a larger bowl and surround it with cool water and then add ice to chill before placing in the freezer.
