Banana Nut Waffles
I had an over ripe banana that was just staring at me every time I walked into the kitchen. “Use me, use me!” it called. So I answered with some Almost Gluten Free Banana Nut Waffles. I call them almost gluten free because other than the cooking spray that I used contains flour. You could definitely just spray a little cooking oil, use some butter or some gluten free cooking spray and then it would be 100% gluten free. I was really surprised how delicious these came out using the rice flour. Of course, when you make something in a smaller batch, it turns out fantastic. Next time, I will definitely double the batch so I will be able to store some in the fridge for the next couple of days. This batter will keep in the fridge about a week. You may need to add a little more whipping cream, milk or water to thin it out if it thickens too much. This is a quick and easy recipe that your family will love. I know mine sure did! Afiyet olsun!
- 4 oz Whipping Cream
- 1 Egg, room temperature
- ½ Cup Sugar
- 1 Ripe Banana
- 1 Tsp Vanilla Extract
- 1 Cup Rice Flour
- 1 Teaspoon Baking Powder
- 1 Teaspoon Baking Soda
- Mix the whipping cream, sugar and the egg until thick and fluffy.
- Add the ripe banana and vanilla extract and mix well.
- Add the almonds, rice flour, baking powder, baking soda and salt and blend until well combined.
- Heat your waffle iron according to manufacturer's directions.
- Add ½ Cup of the mixture to the waffle iron and cook to desired coloring is achieved.
- Remove from waffle iron and serve with butter, syrup and additional sliced almonds if desired.
