Chilton County Peach Cobbler

My sister, Kim and I have been going to wine tastings at some great Alabama Winery’s the past few weekends.  She wants to go to all 16 recognized winery’s in Alabama.  We finished the Northeast Alabama Wine Trail last week.  It included Wills Creek Winery, Jules J Berta Vineyards, Maraella Winery and Vineyard, White Oak Vineyards, Fruithurst Winery, and High Country Cellars.  We decided to check out some of the Winery’s near Birmingham this weekend.  I am planning a post about all our wine tasting trips soon but have got to narrow down some of the pictures and information.  Yesterday, we went to Vizzini Farms, Ozan Vineyard and Winery, and Hidden Meadow Vineyard.   I had bought some small Chilton County Peaches at the Rainbow City Farmer’s Market last Wednesday and since our last stop ended in Jemison which is in Chilton County, we couldn’t leave without some peaches.  It was close to 6:00 pm when we left Hidden Meadow Vineyard and were afraid we would not be able to make it to the Peach park before they closed.  Luckily, the good folks at Hidden Meadows suggested we go to the Piggly Wiggly to get our peaches.  We got a huge basket for $10.00. I made this Chilton County Peach Cobbler today and we split the rest of the basket for snacking.  They are soooo good on their own, but I will probably have some of them cut up in some plain yogurt too.  This cobbler is so versatile because you can basically substitute any in-season fruit and it is amazing!  Make some for your family, they will love you for it!!!!!

Author:
Recipe type: Dessert
Cuisine: American
Serves: 6
Ingredients
  • 1 Cup Butter, slightly softened
  • 1 Cup Sugar
  • 1 Cup Flour
  • 4 Chilton County Peaches (okay you can use Georgia peaches if you have to 😉 )
  • For topping:
  • 1 Cup Heavy Whipping Cream
  • ¼ Cup Powdered sugar
Instructions
  1. Pre-heat oven to 350 degrees.
  2. In a large mixing bowl, cut the butter into the sugar and flour until it just starts to come together.
  3. Peel your peaches and cut into slices. (You can leave the peel on if you like - it is your pie after all!)
  4. Place the peaches in your pan and arrange neatly. I used a ceramic pie pan and it worked great.
  5. Sprinkle the topping over the top of the peaches. It will look messy.
  6. Bake for 30 minutes or until done and then place under broiler for 3 minutes to brown.
  7. While the cobbler is baking, pour the heavy whipping cream into a large mixing bowl.
  8. Sprinkle the powdered sugar over the cream and whip until fluffy. Cover and place in fridge until ready to serve.
  9. When the cobbler is done, remove from oven to cooling rack.
  10. Cool for a few minutes then place on plate and top each serving with whipped cream if desired. Afiyet olsun!
