I bought some gorgeous zucchini and tomatoes yesterday at the Rainbow City Farmers Market.  They were both perfect for my Kabak Dolmasi Stuffed Zucchini.  The zucchini were bright green, gorgeous and straight.  It is important that the zucchini are uniform and straight.  This helps with even cooking.  I cooked the excess zucchini in the pan with the stuffed ones to give more flavor to the broth but you could always reserve them for another dish like Mücver or Zucchini Fritters.  The tomatoes were bright and juicy and gave so much flavor.  It is a great comfort dish that will leave you with a fully belly and a smile on your face.  Serve it with some Garlic Yogurt.  Afiyet olsun!

Kabak Dolmasi Stuffed Zucchini are stuffed with a spice, rice, onion and meat mixture.

Ingredients
  • 6 Zucchini (straight as you can get)
  • 1 pound ground beef
  • ½ Cup Rice
  • 1 Medium Onion, chopped
  • 1 Tomato
  • 1 8oz Can Tomato sauce, separated
  • ¼ Cup Parsley, chopped
  • 1½ - 2 Tablespoons Dried Dill
  • 2 Teaspoons Salt, (1 Teaspoon for meat mixture, 1 Tsp for the sauce)
  • ⅛ Teaspoon Black Pepper
  • Aleppo pepper to taste if desired
  • 1 Cup Water
  • Serve with Garlic Yogurt!
Instructions
  1. Mix the ground beef, onion, rice, 2 Tablespoons of the tomato sauce, parsley, dill, salt, pepper and Aleppo pepper in a large mixing bowl.
  2. Cut the ends off the zucchini then cut in half. Using a zucchini corer or a spoon, core out the zucchini. Do not go deeper than 1 inch from the bottom end of the zucchini.
  3. Place the inside of the zucchini around the edges in the bottom of the pan.
  4. Cut the tomato in twelve pieces (one for the top of each zucchini).
  5. Stuff each zucchini with the meat mixture and then top with a piece of tomato.
  6. Arrange in the center of the pan.
  7. If you have leftover meat and rice mixture, shape into patties or balls and place on top of the pieces of excess zucchini that is around the edges of the pan.
  8. Mix the water and the remainder of the tomato sauce and 1 teaspoon salt.
  9. Pour over the stuffed zucchini.
  10. Place on high heat until it comes to a boil.
  11. Lower heat to medium and cook 40-50 minutes.
  12. Serve with garlic yogurt. Afiyet olsun!
