Cucumber Onion Salad
My mother used to make a salad similar to this when I was growing up. She added more vinegar and she also added sugar. I may get my Southern Girl rights revoked by saying that I am not a fan of adding sugar to some traditional dishes that Southern Cooks add sugar to. Cornbread for example. My daughter actually prefers the sweet yellow cornbread (I call it the JiffyMix or School Lunch Cornbread lol). My sister adds sugar to her Fried Corn and Coleslaw which are always delicious. Anyway, if you are a fan of adding sugar, you can add a pinch or more than a pinch to this salad if you prefer. You could also add a little Italian Seasoning or Dried Dill. I hope you enjoy!
- 3-4 Cucumbers (I like the NON-waxed type but use what you like)
- 1 Onion
- 2 Tablespoons Olive Oil
- 1½ Tablespoon Apple Cider Vinegar
- Salt to taste
- Dash of Aleppo Pepper
- Wash the cucumbers thoroughly and trim the ends.
- Slice cucumber into thin slices. Place into salad bowl.
- Peel the onion and slice into paper thing rings. You can also cut the onion in half and slice into thin half-moon shapes if you prefer. Add the onion to the cucumbers.
- Sprinkle with salt and Aleppo Pepper.
- Drizzle with the Olive Oil and Apple Cider Vinegar. Stir well.
