Caramel Cream Cheese Frosted Apple Cake
If you tried my Carrot Cake recipe and liked it then you are going to love my Caramel Cream Cheese Frosted Apple Cake recipe. For several days, I have been looking at the bowl of apples on the counter and thinking I need to make something with those apples. My mind wandered to my delicious Carrot Cake and I got the great idea to change the recipe up a little.
I substituted apples for the carrots, apple cider for the orange juice, and slivered almonds for the walnuts. I tweaked my cream cheese frosting by adding some caramel and adjusting the amounts of cream cheese, butter and powdered sugar. Did you know you can easily make your own caramel sauce by cooking a can of condensed milk in your crock pot or on the stove for several hours? I will post directions for that soon.
All of this tweaking to my recipe really worked out because I have to tell you that I now have a new favorite. This was so delicious that I have got to get it out of the house so that we won’t gobble it all up. I am going to take part of it to my friend Ange tomorrow. Hope you enjoy it. My New Favorite Recipe – Caramel Cream Cheese Frosted Apple Cake
- 1 Cup Sugar
- 2 Cups All Purpose Flour
- 1 and ½ Teaspoon Baking Soda
- 1 Teaspoon Baking Powder
- ½ Teaspoon Salt
- 1 Teaspoon Cinnamon
- 3 Eggs
- 1 Cup Vegetable Oil
- ½ Cup Apple Cider
- 2 Small Apples, grated
- 1 Cup Slivered Almonds
- For the Frosting:
- 1 Package Cream Cheese
- 4 Tablespoons Butter
- 2 Cups Confectioner's Sugar (Powdered Sugar)
- ¼ Cup Caramel Sauce
- Pre-heat oven to 350 degrees.
- Place your cream cheese and butter on the counter to soften.
- Grease and flour two 9 inch cake pans.
- Mix the flour, sugar, baking soda, baking powder, salt and cinnamon in a stand mixer or large mixing bowl.
- Add the eggs, oil, apple cider and mix well.
- Stir in the grated apple and slivered almonds.
- Divide batter evenly between the two pans.
- Place in the oven and bake for 25-28 minutes depending on your oven.
- Remove cakes from oven. Place on a wire cooling rack to cool.
- Turn the cakes out of the pan onto the cooling rack to cool completely.
- Mix the cream cheese, caramel, butter and confectioner's sugar on high until fluffy.
- Frost the cake with the icing. Serve with coffee or milk. Enjoy!
