Creamy Feta Herb Spread
Before we talk about my Creamy Feta Herb Spread recipe, I need to tell you a story that is funny today but not so much yesterday. I made this yummy spread and decided to take it outside on my back porch for photographs and then snacking. I needed to call my friend Ange, you should remember her from the Decadent Chocolate Cake post.
Well, her mom answered the phone so I was talking to her and snacking on the radishes when suddenly, a small piece of radish was hung in my throat. I was wheezing and my life was passing before me like it did in 4th grade when I was choking on a piece of peppermint. She didn’t know I was choking… I was on the back porch and my daughter was upstairs in her bedroom asleep…oh my God… I am leaving this world at the hands of a tiny piece of radish.
Not a juicy piece of filet mignon, not a stringy glob of cheese, a damn radish. The girl who loves to eat was out of here because of a radish. Then by the grace of God, I thought “Relax, stay calm!” So I did both and eventually, it went on down. My heart was racing after that and I was very thankful to be alive. Moments earlier, I thought I was about to fall off the chair onto the porch. I was hoping if that did happen, my weird neighbor who I had just spoken to was still in his backyard and would see me and call for help.
Luckily, everything worked out and I am here to share this recipe with you. It is wonderful spread on crudites, crackers or pita bread. Feel free to have it with radishes. After my ordeal, I will probably wait a while before I have any more of them. I plan on using it as a base for a veggie tart and I think it would make a great topping for a burger topped with caramelized onions. Also, you could toss your favorite pasta in it. The possibilities are endless on how you can use this spread. And remember, “Chew your radishes good!”. I hope you enjoy it. Afiyet olsun!
- 8 ounces Feta Cheese
- 1 Cup Garlic Yogurt Sauce
- Parsley and Dill for garnish
- In a food processor bowl, combine the Feta Cheese with the Garlic Yogurt Sauce until well combined.
- Then pour into a serving bowl and garnish with chopped parsley and dill.
- Serve with crudites, crackers or pita bread.
