Southern Style Potato Salad
One of my favorite things about this time of year is that the weather is great for cooking on the grill or picnicking. As much as I love cooking, sometimes I don’t want to spend a lot of time in the kitchen. When the weather is nice, it makes you want to enjoy the outdoors. So this recipe for Southern Style Potato Salad will make sure you get to enjoy nature on a full belly. It is simple to make and your family will love it. Southern Style Potato Salad

Ingredients
- 1½ pounds Yukon Gold Potatoes
- 2 eggs, Rinsed under cold water
- 1 Onion, finely chopped
- ½ Cup Duke's Mayonnaise
- ⅛ Cup Grey Poupon Mustard (Use French's Yellow if you must.)
- ½ Cup Sweet Pickle Relish
- 1 Teaspoon Dried Dill
- Salt to taste
Instructions
- Fill a large stock pot with cold water. Then salt generously.
- Place the two eggs in the pot.
- Thoroughly wash potatoes and cut into cubes.
- Next, add them to the pot.
- Turn on heat to medium-high and boil until potatoes are tender. This should take about 20 minutes.
- Remove the eggs and run under cold water.
- Drain the potatoes.
- In a large mixing bowl, mix the chopped onion, mayonnaise, mustard, pickle relish and dried dill until well blended.
- Add the potatoes.
- Peel the eggs, chop them and then add to the mixing bowl.
- Stir well and serve. If you like your potato salad chilled, feel free to refrigerate before serving.
