Hi everyone! I realize that it has been a very long time since I posted on my page. Since October 18, 2017, to be exact. Where have I been you ask? Well, in November of 2017, I started making one of my lifetime dreams come true. I rented a restaurant space. It took me until February of 2018 to get it cleaned up and ready to open. I opened April’s Kitchen on February 22, 2018, and have been going non-stop. Then mid-March, I made the decision to close temporarily due to the virus. I thought it would be a couple of weeks. While many restaurants remain open for carry-out or delivery, I didn’t want to take chances. I plan on reopening on the first of May, God willing!
Cooking Comfort Food
I have gotten some much-needed rest and am being creative in the kitchen so I don’t have to make any trip to the grocery that is not absolutely necessary. One dish I made recently was Oven Roasted Chicken Thighs with Green Beans and New Potatoes. It was delicious! It was also great because it was a one-pan dish.
Even though the dish had potatoes in it, I had a craving for some good ol’ Potato Salad so I made that too.
- 4 Boneless Skinless Chicken Thighs
- 1 pound New (or small red) Potatoes
- 1 pound Green Beans
- 4-5 Cloves Garlic, finely chopped
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 1 Tsp Salt
- 1 Tablespoon Paprika
- 1 Tsp Crushed Red Pepper Flakes
- 1 Tablespoon Parsley
- 3 Tablespoons Olive Oil
- Pre-heat oven to 375 degrees.
- Mix the salt and spices together and set aside.
- Drizzle olive oil into the pan.
- Arrange chicken evenly in the pan leaving space around each piece.
- Cut the potatoes in half and place in empty spots.
- Reserve 1 tsp of seasoning but sprinkle the rest all over the chicken and potatoes.
- Then massage the oil and seasoning into the chicken and potatoes.
- Place in the oven and roast for 30 minutes.
- Next, trim the ends of the green beans, sprinkle with the remaining spice and set aside.
- Carefully remove the pan from the oven and arrange the green beans around the chicken and potatoes.
- Return to oven and bake 15 more minutes.
