Caramelized Onion and Blue Cheese Dip
Since the State of Alabama was shut down by our 6-9 inches of snow, there was a whole lot of nothing going on outside. Boredom quickly set in so what else was left to do except snack. Luckily, I had bought some Ruffles and Cheese It Grooves the other day. After sitting here watching my “show”, Paramparca over the internet for a couple of hours, I decided to get off my behind and make my yummy Caramelized Onion and Blue Cheese Dip to go with those Ruffles and Cheese It’s. By the way, Paramparca is a Turkish mini-series and it is so exciting. Anyway, back to my story. I knew I had some Blue Cheese in the fridge so I decided to try out something that I had been thinking of trying for a while Caramelized Onion and Blue Cheese Dip. This dip is by far so much better than your average French Onion dip that you can buy in the store. And it is way better for you. No chemicals here. Just onions, olive oil, sour cream, yogurt, blue cheese, salt and a squeeze of lemon juice. This would also be a great alternative to mayonnaise on a chicken or roast beef sandwich. The three of us, my daughter, her boyfriend and myself finished it all. I will definitely be on my food list for my next party. Try it out for yourself, you won’t be disappointed.
- 1 Onion, finely chopped
- 3 Tablespoons Olive Oil
- 8 Ounces Sour Cream
- 8 Ounces Thick Yogurt
- 6 Ounces Blue Cheese
- 1 Tablespoon Lemon Juice
- Pinch of salt
- Saute the onion in the olive oil for 6-8 minutes or until golden and caramelized.
- Allow to cool.
- Reserve 2 tablespoons of the onions for garnishing the dip.
- In a food processor or blender, combine the onion, lemon juice, salt and the yogurt and blend until smooth. (If you don't have a food processor or blender, you can just stir it all together. It will be fine. I promise.)
- Mix the onion and yogurt mixture with the blue cheese and sour cream.
- Stir well and pour into a serving dish.
- Top with the reserved caramelized onions. Enjoy with chips, crackers or veggies of your choice. Afiyet olsun!
