Zeytinyağlı Pırasa or Leeks in Olive Oil

Ingredients
- 3 Leeks
- 1 Medium Carrot, about 1 cup chopped into bite sized pieces
- 1 Small Onion
- ¾ Cup Olive Oil
- ¼ Cup Rice, washed and drained
- 1½ Cup Water
- 1 Tablespoon Sugar
- 1 Teaspoon Salt
- 1 Lemon, juiced
Instructions
- Chop the onion and saute in the olive oil until translucent.
- Add in the chopped carrot and saute about 3-4 minutes.
- While the onion and carrots are sautéeing , you need to thoroughly was the leeks.
- Wash them well and slice into about 1 inch pieces.
- Place them in a large bowl of cold water and stir them well to loosen the sandy soil.
- Scoop them into a colander and dump the dirty water.
- Do one final rinse in the same manner as above.
- Add the drained leeks to the onion and carrot mixture and saute 5 minutes.
- Stir the sugar and salt into the 1½ cups of water and stir well.
- Pour over the leeks and stir well.
- Simmer on low heat for 30 minutes or until tender.
- Stir in lemon juice and cook for 3-4 more minutes.
- Remove from heat and cool to room temperature.
- Serve at room temperature. Afiyet olsun!
Notes
This is a delicious Turkish dish that is typically cooked in winter. It is served at room temperature and is even better the second day. Just take it out of the fridge 10-15 minutes before serving so the olive oil will not be congealed.
