Choosing what to serve for dessert can sometimes seem overwhelming. If you serve a heavy meal you tend to go for a lighter dessert. Of course it only makes sense that if you have a light dinner you could indulge a little more and serve something really decadent. What if I told you you could have it all? Literally . . . the whole shebang! Well, the recipe I have for you today is healthy as well as delicious. Since I had given you the instructions for making your own homemade yogurt and posted so many savory recipes using yogurt or garlic yogurt, I thought I should also share a dessert made with yogurt. This is a light and delicious dessert that I think you will enjoy.
- 3 Eggs
- ½ Cup Semolina
- 1 Cup Sugar
- 1 Cup All Purpose Flour
- 1 Cup Full fat Yogurt
- 1 Teaspoon Baking Powder
- 1 Teaspoon Vanilla
- Pinch Salt
- 1 Cup Sugar
- 2 Cups Water
- ½ Cup Honey
- ½ Lemon, juiced
- 1 - 2 Tablespoons Powdered Sugar
- ½ Cup Fresh Fruit
- ¼ Cup Kaymak, Creme Fraiche, Clotted Cream
- Pre-heat oven to 350 degrees.
- Combine the sugar, water and lemon juice and bring to a boil.
- Lower the heat, add the honey and cook until thickened about 10-15 minutes.
- Remove from the heat and cool completely.
- Cream the eggs and sugar together.
- Add the yogurt, semolina, flour, baking powder, vanilla and salt.
- Mix well and pour into a greased and floured 9 inch pan.
- Bake for 45-55 minutes or until the top is golden brown.
- Remove the pan from the oven and place the pan on a cooling rack.
- Pour the cooled syrup over the warm cake.
- Serve at room temperature or chilled.
- Dust with powdered sugar and serve with fresh fruit and Kaymak for garnish. (Optional)
